Directions –
Add tomatoes (Cored), zucchini, squash, onions, peppers in a turkey roaster and cook at 325 degrees for 4 hours. After 4 hours if the juice has dropped considerably add around 10 more tomatoes. Reduce temp to a simmer and cook overnight.

The next morning, emulsion blend until smooth. Once you are done blending continue adding the remaining ingredients. Bring to a boil then simmer until at desired thickness.

If you are just wanting to refrigerate you are DONE! If you want to preserve/can the spaghetti sauce add 2 tablespoons of lemon juice to each jar and leave a 1/2 inch headspace. The processing time is 40 mins in a water bath canner. As always, please reference your Ball Canning Book. If you don’t have one you can find the book here –

  1. BETH DODSON says:

What do you do about all the seeds?

  2. I know this video is old but after adding the tomato paste it needs to be cooked for about 30 to 40 minutes (if not longer) to get that canned strong taste out. You also may want to add the tomato paste while letting the tomatoes cook down slowly.

  3. I made my the same way and it’s great. Thanks

  4. Jenny C says:

Next time strain the veggies before you blend them and it will make a big difference. I have been doing it for many years and it’s always a hit. Your looks amazing and yummy

  5. Hi y'all!
Note of interest… Why are you boiling the jar rings? They are not in contact with the sauce.
(not necessary), but, boil to sterilize the seal covers and then place on jars followed by the rings.
Your jars should be sterilized also and hot with the sauce in it before you place in the water bath. You are risking thermo shock and crack the jars.
(Only need to water bath for 10 to 15 min. max.)
Please read up on how to properly do canning, and change your video.
Sorry to be rude, but your process is wrong.
    Regards, Jojo-bean.

  10. Ok, you both are unbelievably adorable. I started out trying to find a spaghetti sauce canning video where I don't have to (gasp!) skin the tomatoes! I HATE it! Hahaha! I LOVE canning but HATE the SKINNING part! I LOVED your video, and so awesome to see how you just blend your garden vegetables together into an awesome sauce! I am overflowing with tomatoes AND yellow squash, and that is ALL going in the jars! (thanks to you!) Hahaha! Thanks for the awesome video!

  18. Dude! I haven’t watched but part of one of your videos before today but I’m cooking tomatoes and looking at recipes/how-to’s. You made me cry! 😭 I so needed to hear that I am crushing this hard work with gardening and preserving! It is not easy to be a homesteader.
