  11. I bought organic cucumbers and fresh herbs; not cheap. It was a huge waste of time and money. I followed the recipe and can say that the pickle were crisp and looked good, but they tasted like vinegar with a slight herb flavor. I threw them out. Sooooo disappointed!

  22. i have some okra the last of the season i want to know if i can slice them to make quick pickles all the receipes i see do not cut the okra they are all using whole okra is there any special instructions for using cut okra to pickle elaine

  28. Hi sweet Mary! I'm making your pickles today. My son works across the road from a cucumber farm and the owner brought over bags of pickling cucumbers to the trick drivers. Hence I have two grocery bags of cucumbers to process. I wanted to share with you my secret to a tender beef roast. Prepare, season, and cook your roast as you normally do. When you get to the step of adding water to your roast use a quart of strongly brewed tea. The tannins are a tenderizer. Yummy!

    If the brine doesn't cover the pickles, are they not safe to eat?
    I water bathed mine, and left them to cool on the counter in the afternoon. All of them "popped". The next day (less than 24hrs) I noticed that the brine inside the jars wasn't covering them.
    So I opened them and added more brine, and put them in the fridge instead….are they safe to eat?

  31. thisi is confusing to me when you are talking about refrigerator and then water bath and I can't keep it all straight and I'm not sure what I"m suppposed to do now with all these damn little cucumbers I grew….

  37. I’m in Europe and we use metric…Can you please give me the ratio of salt/ vinegar/ sugar to veg if you only want to do one quart jar please? I live alone and can only eat one jar at a time, from my refrigerator.

  40. My cucumbers are soaking in the salt now!😍 I only have a little vinegar, so I'm just making a small batch, and also to eat them THIS week. Next weekend, I plan to purchase more vinegar, and Kosher salt to make a proper pickling batch, and even try water bath!😍 Never water bathed anything, so I'm learning this week and practicing next week. Biden worried me when he said there'd be a food shortage here due to Russian sanctions over there, so I need to learn how to be more self-sufficient now while I can.
