Ingredients for Orange Marmalade Jam –
Orange – 8
Sugar – same by , around 725g

Kitchen Products I use:

Kitchen Weight Scale –
Instant Yeast – (500gms, keep frozen in airtight container, will stay good for years)
Instant Yeast – ( pack)
Pizza Screen – (3 pack – 6,7,8 inches)
Parchment Paper – much better than paper, and it is reusable –
Good NonStick Pan –
Whipping
Oven For Baking – (28liter is good enough)
Microwave – (not good)

    When I make marmalade, I do not separated parts of the orange; I use every bit of it (minus the pedicel). The result taste wonderful with only a hint of bitterness. But, I like the bitterness because its like I am eating a freshly peeled orange.

  7. Can we use erythritol? I’ve made jellied cranberries and it worked well. I love the deep colors you get. I’m wondering about adding a few blood oranges.

    I think now a days, learning how to use up fruit or veg is a skill, that is getting lost. Especially over ripe fruit that would just be thrown out.

    The "white part" of the orange is called pith, and its super bitter. If you want to preserve just the peels of an orange you can make oleo saccarum

    1) Juice and pulp of eight oranges. Squeeze juice from pulp and add to juice. 2) skins from at least 4 oragnes with white pith removed. Julian the skins and add to the juices 3) weight the orange juice. 4) add equal amount of sugar. 5) boil 30 minutes. 6) when marmalade passes plate test it is ready @5:40 . 7) let cool to room temp then jar it. Will last up to a year.
