1. Prepare the Tomatoes:
Start with fresh tomatoes. Plum or Roma tomatoes are often preferred for their rich flavor and low moisture content.
Wash the tomatoes thoroughly and remove any stems.
2. Blanch and Peel the Tomatoes:
Boil a pot of water.
Score a shallow "X" on the bottom of each tomato.
Place the tomatoes in the boiling water for about 30 seconds.
Immediately transfer the tomatoes to an ice bath to stop the cooking process.
Once cooled, peel the skin from the tomatoes; it should easily slide off.
3. Remove Seeds and Excess Moisture:
Cut the peeled tomatoes in half and scoop out the seeds and excess moisture with a spoon.
Chop the tomatoes into smaller pieces.
4. Sauté Aromatics:
In a large skillet or saucepan, heat a generous amount of olive oil over medium heat.
Add finely chopped garlic and diced onions.
Sauté until the onions become translucent and the garlic is fragrant.
5. Cook the Tomatoes:
Add the chopped tomatoes to the skillet.
Season with salt to taste.
If desired, add a pinch of red pepper flakes for a touch of heat.
Simmer the sauce over low to medium heat, stirring occasionally.
6. Simmer and Reduce:
