2. Blanch and Peel the Tomatoes:
  • Boil a pot of water.
  • Score a shallow "X" on the bottom of each tomato.

  • Immediately transfer the tomatoes to an ice bath to stop the cooking process.
  • Once cooled, peel the skin from the tomatoes; it should easily slide off.
3. Remove Seeds and Excess Moisture:
  • Cut the peeled tomatoes in half and scoop out the seeds and excess moisture with a spoon.
  • Chop the tomatoes into smaller pieces.
4. Sauté Aromatics:
  • In a large skillet or saucepan, heat a generous amount of olive oil over medium heat.
  • Add finely chopped garlic and diced onions.
  • Sauté until the onions become translucent and the garlic is fragrant.
5. Cook the Tomatoes:
  • Add the chopped tomatoes to the skillet.
  • Season with salt to taste.
  • If desired, add a pinch of red pepper flakes for a touch of heat.
  • Simmer the sauce over low to medium heat, stirring occasionally.
6. Simmer and Reduce:
  • Allow the tomato sauce to simmer and reduce until it thickens to your preferred consistency.
  • This process can take anywhere from 20 minutes to an hour, depending on the desired thickness.
7. Add Fresh Basil (Optional):
  • For an authentic Italian flavor, add fresh basil leaves to the sauce just before it's done cooking.
