This creamy tomato pasta meal prep is extremely easy to make and takes only 25 to 30 minutes to set you up for the whole week or weeks ahead, depending on how you store it. It’s cheap, low in calories, and will give you the energy to go on with your day. Please enjoy.

Recipe –
Serves – 5
Ingredients –

500g (1.1lbs) – Penne or Pasta of Choice
2 Tbsp (40ml) – Olive Oil
2 – Brown (Yellow) Onions, Diced
6 – Garlic Cloves, Minced
3 Tbsp (100g) – Concentrated Tomato Paste
150ml – Chicken Stock
2 Cans (800g-28.2oz) – Diced or Crushed Tomatoes
2 1/2 tsp (3g) – Dried Oregano
1 1/2 tsp (2g) – Dreid Basil
10g (0.35oz) – Basil Leaves, Stems Saved
2 Tbsp (60g) – Light Cream Cheese
150g (5.29oz) – Baby Spinach
Parmesan Cheese To Taste, Freshly Grated
Seasoning To Taste

Recipe Notes –

This is a vegetarian recipe but can easily be made with chicken and minced beef. This will increase protein intake.

Chicken –

Breast and thigh are great options. Personally id go with thigh as it reheats better. As for cooking breast meat, dice it up and sear first for 6 minutes and remove. As for thigh meat, dice and sear first for 10 minutes and remove. Add the chicken back in before adding in the pasta, after the sauce has been reduced for 12 minutes.

Minced (Ground Beef) –

Add the beef in first and sear for 5 minutes then continue the recipe as normal.

    Definitely freezing once it cools off since that 4 days is a day early for me 😂 other than that this is the first meal prep. 62 hours this week, 70 next week… vegetarian works best for me but thanks for including those meat options in there!

  4. I doubled this recipe and split it into 400g portions as said in the information for the calorie amount. I have about 800g left over. Have I done anything wrong? If I split the leftovers between the 10 containers I assume it will effect the calories. Can anyone help. Thanks

  11. Whenever I’m making a pasta dish, I always prefer cream cheese to heavy cream. I feel like heavy cream tastes too milky if that makes sense, whereas cream cheese doesn’t taste of that really milky flavour

    I know Jack has mentioned versions with meat in in the description but I thought I'd let yous know what I did which turned out beautifully.
    Get some skin on boneless chicken Thighs (1kg) and season the skin and underneath however you want, I used Paprika, Cayenne, Cumin, salt and pepper. Then fry skin side down in a big pan to get a nice crispy skin, turn over to sear the underneath then place in a 200c oven for 15-20 mins for perfectly cooked chicken. Set that to the side then commence the recipe in the pan with all the lovely chicken juices already in the pan. Just add the cooked chicken at the end and I also added some resting juices as well to top it all off. Cheers for another great recipe Jack 👍
